1 pound of chicken, cubed
2 cans of Great Northern Beans
2 cans of chopped green chilies
8 oz heavy cream
1 cup sour cream
1/2 white onion, chopped
Seasonings: (sorry I eyeball it and season to taste)
salt and pepper
Cayenne Pepper (if you like heat)
1.) Cook the chicken with the onions, seasoning lightly with paprika and garlic powder. In a separate pot, put the beans, chicken broth, green chillies and the other seasonings. Once chicken is cooked thoroughly, add to beans, mix well and bring to a boil. Reduce heat and simmer for half an hour.
2.) Turn off, add the cream and sour cream, stir well and serve with your favorite chili toppings.
Options: somedays I'll add things like corn, black beans and salsa to give it a Mexican flare
