Roasted Grouse

Preheat oven to 350 F

this recipe is for 1 serving, but you can multiply it as many times as needed

wrap 2 slices of bacon around 1 breast of well seasoned grouse
get your oil hot in a heavy based frying pan and brown the bird

take out the bird and set aside
reduce the heat to medium and fry 1/2 onion, diced, 1/2 celery rib, diced and 1 carrot, diced, till tender then add 1/2 garlic, diced for a few more mins

pour in 1/3 cup red wine and 1/3 cup stock (your choice) and warm through.

transfer to casserole dish
place the birds on top of the vegetables and liquid
loosely cover with foil and put them in the oven.

roast for 20 minutes
then take out and give the breasts a squeeze
if they feel firm on the outside but with a bit of give inside that should mean they are just cooked through but nice and pink and juicy
or cook a little longer for well done

once cooked take out the birds and set aside to rest
while you return the pan to the stove,
you will scrap all that good stuff off the bottom until it is thickened to your liking
you can add more wine/stock if it’s already gone very syrupy while roasting
strain, taste and season with salt and pepper as well as some butter to your liking

serve with the sauce
