Ginger Nut Cookies

1 cup brown sugar
1 cup caster sugar
1 cup plain flour
1 cup Self Raising Flour
1 tablespoon bi-carb soda
1/2 cup butter (melted)
2 eggs
1/2 cup ground ginger
1 cup crushed nuts
cold water (if needed)

Pre-Heat oven to 180C (360F). Spray baking trays with sprail oil.
Mix all ingredients in a big bowl. Add extra water if needed. A runny mixture will make crispy cookies, a thick mixture will make softer cookies. If too runny add more SR flour!
Put small amounts on trays....allow room for spreading.
Bake in warm oven til brown! ENJOY WARM OR COLD!
