organic/ vegan pancakes

The recipe is found on the back of the package of Arrowhead Mills Organic buckwheat and pancake mix. I altered it to be vegan/vegetarian.

2/3cup Arrowhead Mills Organic buckwheat pancake and waffle mix
1 egg (I used ENER G egg replacer)
2tsp. canola oil
2tsp. honey (use pure maple syrup for vegan)
3/4cup Milk (opts for soy, rice. I used almond)

I also added a teaspoon of vanilla, and a few dashes of cinnamon. The bag has some other stir in ideas as well.

Stir ingredients until lumps disappear. cook on a preheated, lightly oiled griddle (375-400 deg), or a skillet (med. heat). Turn when bubbles form and edges begin to dry.

Canola oil?


Why not use coconut or palm oil instead of the canola oil poison?

Hint* Look up why canola oil was banned in use of baby formula by the FDA. It stunts growth of infants and contains trans fat, there are much healthier options.

Since posting this I have


Since posting this I have gone oil free as well. There are no "health benefits" to using oil. It is purely concentrated fat. If I have to use an oil to avoid "sticking" I will use an olive oil spray, or use Coconut oil from time to time. If you want to avoid oil in baked goods, simply substitute equal parts apple sauce.
