The recipe is found on the back of the package of Arrowhead Mills Organic buckwheat and pancake mix. I altered it to be vegan/vegetarian.
2/3cup Arrowhead Mills Organic buckwheat pancake and waffle mix
1 egg (I used ENER G egg replacer)
2tsp. canola oil
2tsp. honey (use pure maple syrup for vegan)
3/4cup Milk (opts for soy, rice. I used almond)
I also added a teaspoon of vanilla, and a few dashes of cinnamon. The bag has some other stir in ideas as well.
Stir ingredients until lumps disappear. cook on a preheated, lightly oiled griddle (375-400 deg), or a skillet (med. heat). Turn when bubbles form and edges begin to dry.
